A colorful porridge bowl for breakfast

Nothing is more satisfying that spoiling yourself with a colorful breakfast on a grey rainy day.

For this easy super yummy bowl you need:

  • 50g  oats
  • 200ml  milk
  • Apricot sauce
  • Nectarines
  • Almonds
  • Goji berries
  • Greek yogurt
  • Ricotta cheese
  • chia seeds
  • cinnamon

Place the oats and milk in a pan and bring to the boil, simmer for 4-5 minutes. Set it aside and let it cool.

For the topping:

Put the greek yogurt and the ricotta cheese in a bowl and whisk it well until you get a thick mixture. Add it to the bowl.

Cut the nectarines  or any other fruit you like into small cubes, top the oats with it. Add the apricot sauce (very easy to make, put the apricot with sugar and some water, juice of half a lemon in a saucepan and bring it to boil and let it simmer for about 20 min).

Top everything with goji berries, chia seeds, almonds and cinnamon to taste. Enjoy!
