Strawberry galette

Galette comes from the old French word for pebble (galet) and is often found in the shape of a flat round pastry dough, it also refers to an open free-form tart-like pie filled with fresh fruit. This light and refreshing strawberry galette is a perfect dessert for your next spring get-together. It’s very easy to make and really delicious!

For the crust:

  • 125 grams unsalted cold butter
  • 175 grams all-purpose flour
  • 2 Tbsp. sugar
  • ¼ tsp. salt
  • 4 Tbsp. ice cold water

Strawberry Filling

  • 500g sliced strawberries
  • 1 Tbsp. cornstarch
  • 2 Tbsp.  sugar
  • 1 egg for eggwash


For the crust:

  1. In the bowl, combine flour, sugar, and salt.
  2. Add in cold butter cubes. Work in with your hands until fully mixed and crumbles form.
  3. Add water, one tablespoon at a time, until the dough can be gathered into a ball.
  4. When the dough forms, wrap the dough with a plastic wrap and refrigerate for at least 1 hour or up to overnight.

For the filling:

  1. Toss strawberries, cornstarch, and sugar together in medium bowl until fully combined.


  1. Preheat oven to 180C degrees
  2. Unwrap the chilled dough and place on a piece of parchment paper. Dust the dough lightly with flour. Cover the dough with another piece of parchment paper and roll into a circle. Carefully peel off the top piece of parchment paper, and transfer the dough along with the bottom piece of parchment onto a rimmed baking sheet.
  3. Place the filling in the middle of the circle dough leaving about 4 cm around the edge empty.
  4. Fold edges of the galette all around to form a crust.
  5. Whisk the egg yolk with the water in a small bowl and brush the egg wash over the edges of the crust. Sprinkle on sugar over the entire top of the galette and crust edges.
  6. Bake for about 35 to 40 minutes, or until the crust is golden brown and and the strawberry juices are bubbling.
  7. Serve with whipped cream or vanilla ice cream.
